Back in South Carolina I'd lived in one apartment or house after the other, all with great, large kitchens. Did I appreciate those kitchens? Not in the least. How funny it is to me that the kitchen in which I would learn to cook - and not just to cook, but to love to cook - how funny it is that that kitchen would be the size of a closet. Literally.
Our studio apartment's kitchen was carved out of a closet.
Zero counter space. To the right of that photo is our coat closet and then our entryway. To the left, our fridge, and then our bed right next to that. So what you see is all there is. In spite of this nightmare of a kitchen, though, I have learned to love cooking this year! You know what that tells me? That one day, when I have a great, large kitchen again (or even a mediocre, average-sized one) that I am going to really love cooking. Seriously, I can hardly wait.
So anyway, I've decided that from time to time I'm going to share some of our winning dinners here. The recipes more than likely won't be original with me, but they'll be darn good, and I can guarantee that if you decide to try one you won't be sorry. Or at the very least, even if none of you out there are interested, maybe in twenty years Lyon will pull up one of these posts to find the recipe for his favorite ______ that Mom used to make. That would make me really happy.
I really really love our tiny kitchen.
